    San Mai Sujihiki

    Another for the kitchen fresh off the bench this morning

    This western styled San Mai Sujihiki will make a perfect carver for roasts or slicer for meats , fish & vegies.

    My San Mai blade of 52100 core steel clad with 416ss cheeks is 8 3/4" (220mm) , the spine is 3mm thick at the ricasso with a distal taper towards the tip.
    The handle is 5 1/4" (135mm) it is fitted with a G10 guard , 416ss spacer/pin and stabilised York Gum Burl.

    This one will also be on my table at the PERTH KNIFE SHOW - February 2 & 3rd

    That is sweet. There are going to be some happy people at the Perth Knife show with that stuff on the table.
    I'm going like a mad thing to restock my stash because the Adelaide show severely depleted my stocks.
    So looking forward to this.
